Nhị Độ Mai teahouse over time has been known by many names such as Hiên Trà (before 1920 in Đức Ninh – Quảng Bình), Hiên Mai, Tuyệt Tình Cốc, Di Nhiên tea room and now is Nhị Độ Mai teahouse.. The name of teahouse is not only associated with memories of the family’s Plum garden, the scene of sitting under the spring tea porch enjoying Apricot tea with my grandfather watching the yellow flowers bloom, but also inspired by the Nôm story: Nhị Độ Mai. In this work, the apricot blossom blooming a second time is a reward, a good omen from heaven and earth for people with the qualities of “Loyalty”, “filial piety”, “decentness”, “meaning”. Nhị Độ Mai is also associated with the name of Doctor, tea artist Trần Thị Thanh Nhị – the fourth generation of a family with a tradition of researching and making tea. Tea artist Trần Thị Thanh Nhị has won high awards in the 2019 Vietnam Tea Masters Cup competition (First prize in the Tea and side dishes competition; Second prize in the Tea Tasting competition), and will soon be one of three Vietnamese tea artisans participating attend the world tea competition held in China.

Our main source of raw materials is from the wild ancient Snow Shan tea tree. Snow Shan tea is tea picked from ancient tea trees growing at an altitude of over 1,400 m (there are even areas such as Tây Côn Lĩnh where tea trees grow at an altitude of over 2,000 m) above sea level, and there is usually no winter. The sun is still in the summer morning, the tea buds are covered in fog, making picking them painful. The villagers call it Snow tea (or Snow Shan) because in winter the snow covers the tops of the trees, cherishing the essence of heaven and earth waiting for spring to sprout, people gather naturally to create clean tea products, water brings especially delicious flavor. Shan Tuyet tea is considered one of the most delicious drinks compared to products from all tea regions across the country. Nhị Độ Mai tea house collects the essence and selects raw materials in the provinces of Yên Bái and Hà Giang, especially in Suối Giàng and Yên Bái; Phìn Hồ village (Thông Nguyên commune, Hoàng Su Phì district, Hà Giang province, Tham Vè, Bó Đướt (Vị Xuyên – the oldest tea region in Vietnam), Tuả Chùa (Điện Biên). Fragrance tea mainly uses ancient Snow Shan tea material and is scented (meaning scented many times) with 100% natural fresh flowers. The process of fragrant tea is repeated many times (the word practice appears in words such as practice letters, practice martial arts…) causing the tea flavor to penetrate deeply into each tea cell, making the flavor and taste of the tea consistent. with floral scent and taste. After drinking about 3-5 drinks, the scent will gradually fade. As for scenting tea, the intention is to make the tea and flowers unite, so the scent will be very durable, to the point that when the tea has lost its flavor, the floral scent still persists. The scent is still strong after 10 times of mixing. To make tea, we use organic, naturally grown fresh flower sources such as cinnamon, apricot, and white lotus grown in gardens and lakes in Huế.
